Omni Hotels & Resorts is spotlighting local food and beverage on the menus of its properties across the country. The hotel brand announced the launch of Omni Originals, a new culinary and cocktail program will showcase regional culinary talent and trends with quarterly initiatives rolling out at a new property each week. 

The first, month-long initiative under this new program is "Sensational Soups," which will highlight a different regionally inspired, homemade soup every Monday. Partly inspired by Feb. 4 being "National Homemade Soup Day," the Sensational Soups program asks an Omni property's executive chef to create their own twist on a traditional soup. 

For example, the first offering of the program is Tortilla Soup from Omni Mandalay Hotel at Las Colinas' executive chef, Gabino Acosta. The spicy offering, filled with chicken, onions, tomato, and more, is a personal take on the traditional Mexican dish.

"My mother, Maria, is a great cook," Acosta said, in a statement. "She made several dishes out of leftover tortillas and tortilla soup was one of the best. Made in a manner of soups from Mexico, this tried and true tortilla soup is filled with many ethnic ingredients such as tomatoes, garlic, onion, cumin and cilantro to create a savory soup that can be served as an entrée. Tortilla soup is really best served in the winter for its thickness and spiciness…but here in Texas, it's so good we serve it all year-round."

Other featured soups include a hearty New England Clam Chowder, recipe courtesy of Executive Chef Gerard Tice of Omni Parker House in Boston, served through Sunday, Feb. 12; a classic Tomato Soup and Grilled Cheese, recipe courtesy of Executive Chef Robert Ash of Omni Orlando Resort at ChampionsGate in Orlando, served Monday, Feb. 13 through Sunday, Feb. 19; and a creamy Lobster Bisque, recipe courtesy of Executive Chef Sean Merchant of Bob's Steak & Chop House in Dallas, served Monday, Feb. 20 through Tuesday, Feb. 28. Omni guests who dine at participating Omni hotels can sample the featured soup, with the option of purchasing a full-sized cup or bowl, and offering up the recipe for those interested in making some at home. 

This is the latest culinary initiative from Omni, which has rolled out a number of programs to spotlight the local cuisine or on-site culinary offerings of their various properties. These include a honey program that has seen six Omni properties open bee hives on property, producing honey that's used in cocktails, desserts, and more.
