IACC-Americas Names 2013 'USA Conference Center Chef of the Year'

Meeting planners with foodie attendees might want to add St. Louis to their list of potential meeting destinations, as Shane Brassel, executive chef at St. Louis' Charles F. Knight Conference Center, has won the title of "USA Conference Center Chef of the Year," the U.S. chapter of the International Association of Conference Centers (IACC-Americas) announced last week.

Brassel competed in a cook-off alongside conference center chefs from across the country on Jan. 18. His winning dish — pan-seared duck breast on a bed of root vegetable hash served with white wine- and butter-poached shrimp — earned him the right to represent the United States at IACC's 10th annual Copper Skillet Cooking Competition.

Launched in 2004 to showcase the culinary talent at IACC-member conference centers, the Copper Skillet competition will take place in Chicago next month, when Brassel and other chefs from IACC chapters in North America, Europe, Australia and Asia will compete to become "International Conference Center Chef of the Year."
